- 16 oz fettuccine noodles
- 1/2 C nonfat sour cream
- 12 oz evaporated skim milk
- 8 tbs freshly grated parmesan cheese
- 1 tbs olive oil

- 1 clove minced garlic
- 1/4 tsp dried basil
- Pinches of black pepper
- Pinches of crushed red pepper (pizza
pepper)

By
substituting nonfat sour cream and evaporated skim milk for the cream, and cutting back on
the parmesan cheese, it's well within your fat allowance.
Directions
- Cook
pasta and drain.
- Toss the
pasta with the olive oil in the cooking pot.
- Add all
other ingredients and cook over low heat, stirring constantly.
- Serve hot
when thickened.
